Oysters Rockefeller - Chesapeake Style

Our perennial favorite at events. Our twist on the classic grilled dish.
Ingredients
- 3 Dozen Chesapeake Gold Oysters or CB Salts shucked
- 4 slices bacon
- 1/2 onion, chopped and sauteed
- 1/4 cup barbecue sauce
- 4 ounces white or yellow cheddar cheese, grated
- 1/2 jalapeno, seeded and finely diced
Serves: Makes 3 dozen; serves 6 as a main course; 10-12 as an appetizerTime to Prepare: 3 hour to prepare Instructions
- Saute bacon. Remove bacon and cook onions in fat.
- Drain onions
- Place 1/2 teaspoon barbeque sauce on each oyster
- Evenly divide and top bacon, cheese and jalapeno on each oyster
- Grill for ~3 minutes or place under broiler
