Oyster Po Boy Sandwich
Ingredients
- Two pints (32 ounces) shucked Chesapeake Gold oysters
- 1 cup plus 1 tablespoon milk
- 1 tablespoon water
- 1/4 teaspoon cayenne pepper
- 2 eggs
- 1 cup all-purpose flour
- 1/2 cup cornmeal (recommended: Indian Head)
- 1/2 teaspoon freshly ground black pepper
- Kosher salt
- Vegetable oil, for frying
- 6-inch hoagie loaves
- Remoulade sauce (which is what?)
- 4 leaves romaine lettuce
- Vine ripened tomatoes
- 1 to 2 lemons
Beer Batter for Oysters
- 1 Cup all purpose flour (and cornmeal?)
- 1 tsp. baking powder
- 1/4 c. vegetable oil
- 1 Egg
- 1 Cup beer
- 1 tsp. salt
- Deep fat for frying
Serves: 4
Instructions
Mix flour and baking powder.
Add egg, beer and oil.
Beat until smooth.
Dip chunks of oyster into batter.
Fry in 3 to 4 inches of fat at 375 degrees until golden brown.
Place on a paper towel to absorb excess oil.
Assemble.
Toast bread.
